This is a great fruit pie. So if you don’t like fruit pies… shame on you because this is a fantastic fruit pie. You may be thinking, "oh a fruit pie, *unenthusiastic yay*." But this is the fruit pie of all fruit pies. It’s got apples, blueberries, peaches, strawberries and raspberries. This is a great pie for holidays, birthdays, gatherings, and any other event. This is an original recipe, but inspired by a pie our family bought from a fundraiser, and parts of the pie were borrowed from my mom's cookbook called “Rodale’s Complete book of Home Freezing”, found on page 282, Strawberry-Rhubarb Pie. From personal experience I love this pie. I have eaten this pie many times and it tastes great every time I eat it. I also know this is a great pie because when my mom makes it and people come over, they lick their plate to make sure they get all of it. This has happened on several accounts for different people. In order to successfully make this pie you need to follow these steps carefully. Good luck. :)

1. make the fillingIn a 5-qt pan, gently stir together 1 cup strawberries and apples for about two minutes. Then add cornstarch. Add honey and cook over medium heat until heated through and thickened. Gently stir in remaining fruit. Set aside.
2. prepare the pie crustRoll out pastry to fit a 10 inch deep-dish pie plate. Spoon filling into pie shell. Roll out a second pie pastry. Carefully place on top of the pie filling. Crimp or flute edge of pie pastry. Prick top crust with a fork or make slits in top. Sprinkle generously with cinnamon sugar.
3. bake the piePlace pie on cookie sheet or broiler pan and bake at 400 degrees fahrenheit for 50-65 minutes until filling bubbles. If top crust or edges brown too quickly, cover with foil.
4. serve the pieAfter the pie cools which will take about one to two hours, cut the pie into seven or eight pieces. Place each piece on a serving plate and top with your favorite whipped topping or vanilla ice cream. Whipped cream is preferred for best results.
