Kids have a hard time saying no to chocolate and peanut butter. Is that really a surprise? I mean who wouldn’t want to eat a couple of chocolate chip cookies, Reese’s peanut butter cups or peanut butter cookies, right? But let’s face it… these snacks won’t give you sustainable energy when you need it, won’t help you stay trim and fit or provide you with the energy you need to stay active. Trying to find something that two active teenage girls will eat is no small challenge. Trust me, I have tried. Especially when they both are extremely picky. Trying to make it tasty but also good for you is even harder. I searched to find a recipe that would provide taste for the girls but also energy so they can keep up with their after school sports. It has to be something they could take on the go and eat before hitting the lake for crew practice, the soccer field or the basketball court. This is a recipe I found online and they both loved them. In fact not only have I made several pans but so have each of them on their own. It is an easy recipe and only requires a few ingredients and not a lot of time. It doesn’t have to be baked. You just mix ingredients and put them in the refrigerator or freezer. One of those ingredients is ground flax seed. Flax seed can be found in grocery stores everywhere not just in health stores or specialty stores. In town you can find it at Walmart and Busch’s.
Flaxseed has a lot of health benefits, this is a few of them:
Ingredients:
1 cup rolled oats
½ cup mini semi sweet chocolate chips
½ cup ground flax seed
½ cup crunchy peanut butter
⅓ cup honey
1 teaspoon vanilla
Combine the oats, chocolate chips, flax seed, peanut butter, honey and vanilla together in a bowl. Mix all the ingredients together with a rubber spatula or spoon until they have a consistent consistency. The mixture will look like cookie dough. You can choose to eat them in different ways. You can roll them into small balls and place on a plate or tray. Or you spread mixture out into a pan in a solid piece and cut when ready to eat. You can put these into the refrigerator or into the freezer if you prefer them frozen.
My picky teenage girls prefer them spread out into a pan and the put in the refrigerator. Then when they are heading out on the go they like to take a few pieces with them. They never last long in the house.
